老話常說小暑大暑，上蒸下煮，今天正式迎來大暑，也是一年里暑氣、濕氣最厚重的時節。持續的高溫裹挾著潮氣，出門走幾步就渾身黏膩出汗，不少人這段時間總覺得渾身沉重、胃口低迷，口干心煩，夜里睡覺也燥熱難安。很多人貪圖冰飲、重油重辣菜肴，短期舒服，反倒加重體內燥熱濕氣。

大暑飲食講究清潤不進補，順應時令吃應季食材才是關鍵。不用名貴藥膳，菜市場常見的冬瓜、蓮藕、高筍、苦瓜都是大暑專屬時令食材，清暑祛濕、溫和不傷脾胃。今天分享四道適配大暑三伏天的家常菜品，一湯三菜搭配均衡，口感清爽開胃，做法簡單快手，新手也能輕松上手，三伏天換著做，吃完全身清爽，舒緩暑天各種不適感。

第一道：冬瓜排骨湯｜大暑時令清潤靚湯，鮮潤解濕

冬瓜是大暑標志性時令食材，水分充足，自帶清潤特質，三伏天燉湯再合適不過。燉好的排骨湯湯色清亮通透，排骨燉得軟爛脫骨，肉質緊實鮮嫩，抿一口肉香十足。大塊冬瓜吸飽骨湯，變得溫潤軟糯，入口清甜無厚重油膩感，湯頭鮮淡回甘，喝下瞬間消解周身悶熱濕氣。天熱渾身發沉、口干沒胃口，飯前喝一碗，健脾補水，老少都適配。

食材：排骨、大暑時令冬瓜、生姜、蔥段、食鹽、料酒 1、排骨冷水下鍋，放入姜片、料酒焯水，煮開撇凈浮沫，溫水沖洗瀝干； 2、砂鍋加足量清水，下入排骨、姜片、蔥段，大火燒開轉小火慢燉四十分鐘； 3、冬瓜去皮切厚塊，放入砂鍋中繼續燉煮十五分鐘，煮至冬瓜通透變軟； 4、出鍋前加少量食鹽調味即可，無需多余調料，保留食材本味，最后撒上蔥花即可端上桌。。

第二道：熗炒蓮藕｜大暑時令脆嫩小菜，酸辣開胃

蓮藕正值大暑時令，汁水飽滿、脆嫩無渣，燥熱天食欲不振，炒一盤熗炒蓮藕瞬間打開食欲。去皮后的藕片潔白光亮，大火快炒過后依舊脆爽不發黑，咬下去咔嚓作響，微酸微辣的調味裹滿每一片蓮藕，自帶蓮藕本身的清甜，清爽解膩，中和三伏天積攢的燥熱。大魚大肉吃多了，搭配這道小菜，解膩又下飯，口感層次十足。

食材：新鮮蓮藕、干辣椒、花椒、蒜末、生抽、香醋、鹽、白糖、食用油 1、蓮藕去皮切薄片，放入清水浸泡沖掉多余淀粉，防止炒制發黑； 2、鍋中燒水煮沸，藕片焯水三十秒，立刻撈出過涼水鎖住脆感； 3、熱鍋倒油，小火爆香蒜末、花椒、干辣椒，倒入藕片大火快速翻拌； 4、加少許鹽、生抽調味，撒入少許白糖提鮮，沿著鍋邊淋入香醋，翻炒均勻即可出鍋。

第三道：高筍炒雞蛋｜大暑時令鮮蔬，清淡養胃

高筍（茭白）是大暑獨有的時令蔬菜，鮮嫩多汁，性質溫和，暑天吃能夠舒緩燥熱、滋養脾胃。削好的高筍白嫩透亮，切片炒制后清甜脆嫩，搭配蓬松金黃的雞蛋，蛋香融合筍鮮，口感軟嫩順滑，口味清淡不寡淡。沒有厚重油脂，老人、孩子腸胃弱也能放心吃，三伏天吃它緩解渾身乏力，清淡又飽腹。

食材：大暑時令高筍、雞蛋、香蔥、鹽 1、高筍剝去外殼，削掉底部老硬根莖，洗凈切薄片；雞蛋加少許鹽充分打散； 2、熱鍋倒油，倒入蛋液炒熟定型，盛出放置一旁備用； 3、留底油爆香蒜片，下入高筍片大火翻炒至微微變軟； 4、倒回炒好的雞蛋，加少量鹽調味，撒入蔥花翻炒均勻就能裝盤。

第四道：苦瓜炒肉絲｜大暑時令清火菜，舒緩心煩燥熱

苦瓜是大暑必不可少的時令苦味食材，專門應對三伏天上火、心煩、口干等不適。處理到位的苦瓜翠綠鮮亮，脆嫩不澀口，淡淡的清苦過后自帶回甘，搭配滑嫩入味的肉絲，肉香中和苦味，葷素搭配鮮香下飯。不會有單一素菜的寡淡，燥熱天吃它清心降火，吃完渾身通透，緩解暑天帶來的煩悶感。
